Story

This exceptional lot comes from our founder’s farm, Finca de Dios, and features the carefully selected Yellow Caturra variety processed with a unique anaerobic fermentation.

  1. We began by placing the whole cherries into sealed barrels for a controlled anaerobic fermentation, allowing the natural sugars and yeasts to intensify the coffee’s complexity.
  2. After depulping, the beans underwent a second anaerobic fermentation in the same barrels, deepening the flavor profile even further.
  3. The coffee is then washed and slow-dried on raised beds to preserve clarity and nuance.

The result is a vibrant, layered cup—bursting with notes of red cherry, subtle undertones of white wine, and a rich, buttery body that lingers beautifully.
