Anaerobic Yellow Caturra is a World Championship finalist and single-origin Guatemalan specialty coffee produced by Ellen Prentice at Finca de Dios, our founder’s farm in Fraijanes, Guatemala.
Grown at more than 1,750 meters, this exceptional microlot combines the Yellow Caturra variety with a carefully controlled anaerobic fermentation process to create a vibrant, fruit-forward coffee with remarkable depth and complexity.
What makes this anaerobic coffee special?
The difference begins with the process.
Freshly harvested whole coffee cherries are placed into sealed barrels for a controlled anaerobic fermentation, creating an oxygen-free environment where the coffee’s natural sugars and yeasts develop more intense and complex flavors.
After depulping, the coffee undergoes a second anaerobic fermentation in sealed barrels, further developing its distinctive flavor profile.
Finally, the beans are carefully washed and slowly sun-dried on raised beds to preserve clarity, sweetness, and nuance.
The result is an expressive cup bursting with peach and ripe cherry, complemented by subtle white wine notes, bright and complex acidity, and a rich, buttery body that lingers beautifully.
